A little perspective and delicious CAKE!!!
I think it's easy sometimes to get a little negative about things that may be out of our control, or about recent activites that get a person frustrated or misconstrued information that leads to sometimes bad feelings and heck, life sometimes is tough, but it seems like it's harder work somedays to try to remain positive, and I think it's that way for most of us...so on Monday I was crabby I think just because it was Monday, was late getting home, and on TV at the time was the Terry Fox movie....I'd never seen it before but what a way to gain perspective about some rough times.....nothing to me, is as rough as what he had gone through to try to make Cancer history...it seemed like a pretty honest portrayal his life, his journey and how it affected him on a day to day basis, his best friend and his family...it was a great movie, and gave me some perspective...sometimes that's all we need, a little dose of someone else's reality to put things in perspective...worked for me...
So with a long weekend ahead, first of all I hope you can take come time and enjoy some of the goings-on, like the New Glasgow Jubilee, incredible talent all over one weekend...it's quite fabulous....and Stewiacke Town Days happening as well...good times all around!! But if your having company over, or need to take something somewhere at a potluck, let me share with you these fabulous dessert cake ideas and are scrumptous and LOW FAT...seriously, because I don't joke about cake...
Diet Coke Cake
1 can of diet coke
1 box of devils food cake, cake mix
Mix the two together, and follow the baking instructions as per the box...JUST THOSE TWO INGREDIENTS, I'm serious, DELICIOUS and moist chocolate cake...serve with a little low fat or fat free whip cream and yum in your tum...the can of diet coke replaces the eggs and oil that you would normally use in the cake mix....
OR/AND
1 can of blueberry or cherry pie filling
1 box of angel food cake
Mix the two together and SHA-ZAM, more deliciousness and LOW FAT/LOW CAL...now the baking instructions are something like 30 minutes at 350...but I find ovens vary BIG TIME...so keep checking after the 30 minute mark, this one is extra moist, may take a little longer to cook up to your liking....but you can even use a can of crushed pineapple....it's light and delish and you'll love it...
Oh and both are best cooked in a 9x13 baking dish.... If you make one of these YOU MUST let me know what you think....I love cake...
